Emporium Brasil, founded as a
Brazilian market and newstand a decade ago, has evolved into
a dining destination on a stretch of West 46th Street
between 5th and 6th Avenues which was officially named
"Little Brazil Street" by the city in 1995. |
Emporium Brasil upholds its country's multi-ethnic culinary
traditions with a menu created by manager Regina Silva and
executed by chef Samira Suarez.
"There's a taste of
history in every bite of Brazil's cuisine", says Ms.
Silva.
Developed over hundreds of years , it combines native
foods of manioc (cassava or yucca meal), sweet potatoes,
hearts of palm, game, rice and beans and fish with the
influences of the colonizing Portuguese who introduced
Moorish influences of coffee, dried fruit and pastries.
West
Africans greatly influenced the cuisine with their use of
dende palm oil (providing the strong taste and golden hue
that characterizes many Brazilian dishes), peppers and
coconut milk.
